Last year we featured coffees from the S\u00e3o Silvestre farm in Minas Gerais \u2014 one processed with anaerobic fermentation and another with carbonic maceration. Both were remarkable. In fact, the carbonic maceration lot placed&nbsp;<strong data-start=\"346\" data-end=\"371\">5th out of 15 coffees<\/strong>&nbsp;in the Filter of the Year competition \u2014 surpassed only by four Colombian coffees. Not a bad result for a Brazilian!<\/p>\n<p data-start=\"489\" data-end=\"765\">It shows that a new strategy adopted by some Brazilian producers is working: by combining carefully selected cherries with innovative fermentation methods, they can create coffees with vibrant characteristics often associated with high-altitude regions like Colombia or Kenya.<\/p>\n<p data-start=\"767\" data-end=\"822\"><strong data-start=\"767\" data-end=\"822\">Marquino is the perfect successor to those coffees.<\/strong><\/p>\n<p data-start=\"824\" data-end=\"1197\">Like S\u00e3o Silvestre, this coffee reflects meticulous work from cherry selection to fermentation. The producer,&nbsp;<strong data-start=\"934\" data-end=\"996\">Marco Antonio da Silva \u2014 affectionately called Marquinho \u2014<\/strong>&nbsp;has dedicated years to improving the quality of his coffee. His efforts have been rewarded with recognitions such as&nbsp;<strong data-start=\"1114\" data-end=\"1139\">Best Fermented Coffee<\/strong>&nbsp;and&nbsp;<strong data-start=\"1144\" data-end=\"1171\">2nd Best Natural Coffee<\/strong>&nbsp;in regional competitions.<\/p>\n<h4 data-start=\"1213\" data-end=\"1421\"><strong>The Bean<\/strong><\/h4>\n<p data-start=\"1213\" data-end=\"1421\">Like many exceptional Brazilian microlots, we roast this coffee&nbsp;<strong data-start=\"1277\" data-end=\"1286\">light<\/strong>. While we also enjoy darker roasts, a darker profile would hide many of the delicate flavour attributes that make this coffee special.<\/p>\n<p data-start=\"1423\" data-end=\"1784\">Brazilian coffees are typically grown at&nbsp;<strong data-start=\"1464\" data-end=\"1486\">moderate altitudes<\/strong>, which means the beans are generally less dense than those from very high elevations. Because of this, they do not tolerate extremely aggressive roasting temperatures. In addition, Brazilian coffees naturally have&nbsp;<strong data-start=\"1701\" data-end=\"1718\">lower acidity<\/strong>, so there is little reason to apply heavy he<span style=\"font-family: var( --e-global-typography-text-font-family ), Sans-serif;\">at to soften the cup.<\/span><\/p>\n<h4 data-start=\"1213\" data-end=\"1421\"><strong>The Aromas<\/strong><\/h4>\n<p data-start=\"1802\" data-end=\"1902\">Marquino expresses a beautiful aromatic profile:<br data-start=\"1850\" data-end=\"1853\"><strong data-start=\"1853\" data-end=\"1902\">berries, milk chocolate, toffee, and caramel.<\/strong><\/p>\n<p data-start=\"1904\" data-end=\"2194\">When brewing, the same philosophy applies as with roasting:&nbsp;<strong data-start=\"1964\" data-end=\"2007\">too much heat can flatten the flavours.<\/strong>&nbsp;We find that this coffee performs beautifully with&nbsp;<strong data-start=\"2059\" data-end=\"2098\">filter brewing and electric brewers<\/strong>, producing a sweet and balanced cup \u2014 a good sign that the roasting has captured its character.<\/p>\n<h4 data-start=\"1213\" data-end=\"1421\"><strong>Our V60 recipe<\/strong><\/h4>\n<p data-start=\"2216\" data-end=\"2237\">For pour-over we use:<\/p>\n<ul data-start=\"2239\" data-end=\"2337\">\n<li data-section-id=\"6abuy2\" data-start=\"2239\" data-end=\"2258\">\n<p data-start=\"2241\" data-end=\"2258\"><strong data-start=\"2241\" data-end=\"2256\">18 g coffee<\/strong><\/p>\n<\/li>\n<li data-section-id=\"1frygzk\" data-start=\"2259\" data-end=\"2278\">\n<p data-start=\"2261\" data-end=\"2278\"><strong data-start=\"2261\" data-end=\"2276\">280 g water<\/strong><\/p>\n<\/li>\n<li data-section-id=\"15gswjt\" data-start=\"2279\" data-end=\"2310\">\n<p data-start=\"2281\" data-end=\"2310\"><strong data-start=\"2281\" data-end=\"2308\">92 \u00b0C water temperature<\/strong><\/p>\n<\/li>\n<li data-section-id=\"8ds2us\" data-start=\"2311\" data-end=\"2337\">\n<p data-start=\"2313\" data-end=\"2337\"><strong data-start=\"2313\" data-end=\"2337\">Brew time: 2:30\u20133:00<\/strong><\/p>\n<\/li>\n<\/ul>\n<p data-start=\"2339\" data-end=\"2580\">This temperature allows the coffee to show both&nbsp;<strong data-start=\"2387\" data-end=\"2415\">complexity and sweetness<\/strong>.
