Santa Helena

Loquat, Blackcurrant, Vibrant

Felicitas Ñahuincamasca Huillca has been cultivating coffee since the 1990s, building a life for herself and her children through her dedication to the craft. Today, her adult children work alongside her on Finca Santa Elena, where they tend to 10 hectares of coffee plants, including the Typica variety featured in this lot. The family carefully hand-picks the ripe red cherries and processes them directly on their farm. After pulping, the coffee is fermented in water for 36 hours. Following fermentation, the parchment is thoroughly washed in clean water and laid out on drying beds to sun-dry. To ensure even drying, the family rakes the parchment frequently. The drying process typically takes about 15 days.

About the Typica Variety:

The Typica coffee varietal, once widely popular due to its high quality, has become increasingly rare. This is partly due to its delicate nature, making it more susceptible to challenges like leaf rust and lower yield production. Typica is one of the purest and most traditional coffee varieties, cherished for its unique characteristics but now facing the threat of extinction. It is a privilege for us to offer you this exceptional coffee from Felicitas, allowing you to savor a delicate and vibrant cup of coffee that represents a rich heritage.
